Vanilla Paleo Cupcakes Recipe (Gluten-free and Dairy-free)

  • ½ cup Coconut Flour
  • 4 Eggs
  • 1/2 cup Raw Honey
  • 1/3 cup Coconut Oil (measure when melted)
  • 2 tablespoons Milk (regular milk or coconut milk or water would work too)
  • 1 teaspoon Vanilla Extract (optional)
  • ½ teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ½ teaspoon Apple Cider Vinegar
  • ¼ teaspoon Sea Salt

  1. 1. Combine all ingredients in a large bowl and stir well until thoroughly mixed.
  2. 2. Use a spoon to scoop batter into muffin cups. I use these non-toxic baking cups for my cupcakes.
  3. 3. Bake at 350 degrees for 15 to 20 minutes or until golden brown.
